THE HERITAGE DIFFERENCE - At Great West we specialize in Highland cattle. By doing so we are reintroducing one of the early-domesticated heritage breeds coming close to extinction; in spite of being world renowned for its exceptional beef quality. Highlands, in fact, are some of the most coveted cattle in the world and Great West has chosen from the finest of these to create exceptionally hand-crafted Artisan Beef. Highland beef is so good that the Queen of England has a large herd of Highlands at Balmoral Castle in Scotland and prefers it over any other beef in the world.

AN ARTISAN BEEF PRODUCER - Artisan Beef Producer; a term used to distinguish smaller ranchers from large industrial operations. They raise animals the old fashioned way, naturally . Naturally raised animals are spared the stress of confinement found at industrial slaughterhouses, and they are reared without the routine use of antibiotics or growth hormones. Animals not under stress, fed an all natural vegetarian diet of high quality forage and grains grow better, producing beef that is healthy and has a discernable depth of flavor.

DRY AGED TO PERFECTION - Less than 1% of all beef is dry-aged, it's an investment in time and money that few steak houses, and even fewer retailers, are willing to make. By meticulously dry-aging all our meat ( including our gourmet steak burgers ) it reaches its full maturity in taste producing a wonderful, rich, beefy taste you associate with fine beef and fine wines . Some think dry-aging isn't worth the time and expense. At Great West Cattle, we do.
